Arbi ke cutlet | Arbi ke Kabab
Arbi cutlet or arbi kabab ( अरबी के कटलेट ) is a very delectable, crispy and tempting tea time snack recipe. Boiled and mashed arbi ( also known as 'colocasia' and 'taro root') mixed with basic ingredients gives an amazing taste. You can prepare this recipe during your fast by adding or removing some ingredients. This is a vegan and no onion no garlic recipe. This is a deep fried and easy recipe. This is a good option for weekend or any occasion. You may also add these in your party menu.
To make this recipe, Arbi is boiled, mashed and mixed with spices like coriander powder, red chilli powder, garam masala, amchoor powder, green chilli and fresh coriander. The addition of rice flour gives some crispiness. You can make it without investing too much time and effort if you have already boiled arbi in your kitchen.
Arbi kabab can be served with green chutney and tomato ketchup. These kababs can be made for breakfast or evening snacks. These can be served as appetizer or snacks. So now let’s start the process of arbi kabab.
Ingredients:
½ kg arbi
Salt to taste
½ tsp. red chilli powder
1 tsp. coriander powder
¾ tsp. amchoor powder
¼ tsp. garam masala
1 green chilli, chopped
Some fresh coriander, chopped
½ cup rice flour
Oil for frying
Instructions:
Wash the arbi properly with water to remove all dirt. Boil arbi in a pressure cooker with little water for 5 minutes or till they become soft. Do not overcook.
Cool down and peel off the skin.
Mash them using a fork.
Add salt, Coriander powder, red chilli powder, amchoor powder, garam masala, chopped green chilli and coriander.
Add rice flour.
Mash and mix to combine all ingredients.
Apply some oil on your palm. Take some portion and cover wooden stick. Give shape them like a kabab.
To make cutlet, take some portion. Give a round cutlet shape.
Now fry them. Heat oil in a pan. Place kabab in hot oil one by one.
Fry them over low to medium flame. Flip them continuously to avoid burning.
Fry till they become golden brown in colour. Remove from oil.
Fry cutlets in same manner.
Serve hot with your favorite sauce.
Tips:
- Adjust spices according to your taste.
- You can add refined flor or corn flour in place of rice flour.
- Give shape according to your preferences.
- If you are preparing for fasting, use kuttu flour in place for rice flour.
- Serve them hot. As it cools, it starts to become soft and lose their crispiness.
