Thandai is a refreshing, cooling, delectable and rich traditional drink that is generally prepared on the occasion of Mahashivratri and Holi. It is easy to make drink packed with dry nuts and flavored with fragrant spices. Lots of dry fruits make it a rich and healthy drink.
This beverage is called as thandai because some of the dry fruits, seeds, spices are cooling in nature. It gets richness from almonds, raisins, melon seeds and dry dates. It gets aroma and sweet scented flavors from fennel seeds, gulkand, cardamom and saffron. Just grind, mix with milk, strain and serve. Add sugar to give sweetness as required.
Thandai is a delicious blend of dry fruits and flavored spices. There are many readymade versions of this drink available in the market, but nothing beats the taste of homemade thandai. It is available in various forms thandai powder and thandai syrup. But these store bought thandai have preservatives, articial color and lots of essence. So here is the recipe of thandai.
Ingredients:
25-30 Almonds
15 raisins
2 tbsp. melon seeds
2 deseeded dry dates
1 tbsp. black pepper
2 tbsp. fennel seeds
5 green cardamoms
15-20 saffron strands
2 glass milk
2 tsp. gulkand
1 tsp. rose essence
Sugar as per requirement
Instructions:
Take almonds, raisins, melon seeds, dry dates, fennel seed, black pepper and green cardamom in a bowl. Add 1 cup water and leave for overnight.
Next day soak some saffron strands in 1 tbsp. milk and keep aside.
Drain excess water of nuts and add in a blender.
Add ½ cup water and make a smooth paste.
Take ½ part of paste and keep aside.
Add 2 tsp. gulkand in blender and grind again.
Pour the paste in a strainer and strain. Add 1 glass milk and strain again.
Add 1 tsp. rose essence in thandai. Mix well.
Rose thandai is ready to serve.
Take rest part of mixture. Add ½ cup of water and mix.
Strain this mixture.
Add 1 glass milk, saffron milk and 1 tsp. sugar. Mix properly.
Garnish with some saffron strands and serve.
Kesar thandai is ready to serve.
Tips:
- You may add ice cubes if required chilled thandai.
- Gulkand has its own sweetness. You may add sugar as per your choice.
- You may add pink food colour in rose thandai.
- You may also add pista and poppy seeds.
