Gajar ki burfi | Gajar Pak | Carrot fudge
Gajar ki barfi (Carrot fudge) गाजर की बर्फी is an Indian sweet dish which is generally prepared during winter season. It is also known as Gajar Pak. This is one of the most popular and loved dessert of North India. This is very delicious and healthy because carrot is a good source of vitamin A and calcium.
It is made by red carrots, milk powder, mawa and jaggery. I have used jaggery (gur) in place of sugar to give sweetness. Serve with a garnish of desiccated coconut. It is a winter delicacy and a delight for sweet lovers. If you are hosting a party you can serve this as a dessert. You can use this in place of gajar ka halwa. So, try this delectable recipe and impress your loved ones.
Ingredients:
1 kg carrot, grated
1 cup milk
1 tsp. ghee
1 cup mawa
1 cup gur (jaggery)
1 cup milk powder
1 tsp. cardamom powder
For topping:
Desiccated coconut
Cashews
Instructions:
Wash the carrot very well. Peel with a peeler and grate them to medium thickness.
Add the grated carrots and ½ cup milk in a pressure cooker.
Let it cook for 2 whistles. Switch off the flame. Once the pressure is released, open the lid.
Add 1 tsp. ghee in a wok. Pour carrot mixture into a pan and cook on low heat until all the milk is absorbed.
Add mawa and cook again.
Add jaggery and cook for 4-5 minutes on low heat till mixture starts to thicken.
Add 1 cup milk powder and mix properly. Moisture should be evaporated completely.
Add cardamom powder and mix.
Grease a pan and pour mixture. Tap to make it evenly.
Garnish with desiccated coconut and cashews.
Let it cool properly. Cut into desired shape.
Gajar ki barfi is ready to serve.
Tips:
- You can choose either mawa or milk powder.
- You can use sugar in place of gur.
