अलीगढ के मशहूर बरूले | Aloo ke Barule
Aloo ke baroole ( आलू के बरूले ) is a famous and mouthwatering potato snack from Aligarh, Uttar Pradesh. It is a favorite, delectable and orange coloured street food of Aligarh. You can find it easily on the roadside stalls during winter season. Baroole is a crispy snacks and appetizer recipe that is prepared with baby potatoes, gramflour and spices. This is a vegan and no onion no garlic recipe. This is a deep fried and easy recipe. The crunchy, exiting texture and the vibrant flavor make baroolas a popular amongst foodies.
To make Baroolas, baby potatoes are properly washed and paraboiled. Then they are coated with gramflour and spices like coriander powder, red chilli powder, heeng and tempted with orange food colour. The addition of thick grinded gramflour gives some crispiness. You can also use some rice flour. If you have already some green and sweet chutney at your home, you can make it without investing too much time and effort.
Potato barooles are served with green coriander chutney and imli ki chutney. These baroolas can be made for breakfast or evening snacks. These can be served as appetizer or snacks. This is a good option for weekend or any occasion. So now let’s start the process of potato baroolas.
Ingredients:
500 gm. Baby Potatoes
¼ cup gram flour ( besan)
½ tsp. coriander powder
¼ tsp. red chilli powder
A small pinch heeng
Salt to taste
Some drops of orange food color
Oil for frying
Instructions:
Properly wash baby potatoes. Remove all dirt.
Add in a pressure cooker with 1 glass water and boil for 1 whistle.
Take out these half boiled potatoes from cooker. Do not peel them.
Sprinkle some gramflour, coriander powder, ¼ tsp. red chilli powder, a small pinch heeng and salt to taste.
Add some drops of orange food colour.
Coat them well. Add little amount of water, if required. Again sprinkle some part of gramflour. Coat them using your fingers.
Repeat this process for once more or until potatoes are coated well.
Heat oil in a pan. Drop barulas in hot oil and fry them over medium flame.
Fry till they become golden brown in color. Remove them from oil using colander.
Take in a plate and press with other plate to crush them.
Garnish with green and sweet chutney and sprinkle some chaat masala.
Serve hot.
Tips:
- Properly wash potatoes.
- Do not over boil potatoes. Potatoes should be half boiled.
- Add gramflour over hot potatoes.
- Use thick grinded gramflour. If you don’t have, add 2 tbsp. rice flour or corn flour.
- You can skip orange food colour.
- Adjust spices according to your taste.
