Kheekri Recipe | मसाला खीकरी
Kheekri is a crispy and delicious recipe from Braj region of Uttar Pradesh. It is a popular and traditional recipe that is generally prepared during wedding rituals and festivals. It’s an easy to make and vegan recipe. It can be stored for 10-15 days. Kheekri tastes good with mango pickle or you can serve as evening snacks.
Kheekri or khikri is basically made with only two ingredients whole wheat flour and salt. It is rolled thin and deep fried over low flame till it becomes crispy and golden brown. I have given a scrumptious twist to this kheekri. I have added some suji (rava), gramflour and basic spices like carom seeds, turmeric powder, fenugreek leaves, black pepper powder, yellow chilli powder, coriander powder, cumin and a small pinch of heeng with whole wheat flour. These spices make it flavorful and unique.
Kheeri can be served in breakfast or evening snacks. It can be served with pickle or a hot cup of tea. So let’s make kheekris.

Ingredients:
2 cup whole wheat flour (gehun ka aata)
½ cup sooji
¼ cup gram flour (besan)
1 tbsp. fenugreek leaves (kasuri methi)
1 tsp. carom seeds (ajwain)
½ tsp. black pepper powder (kali mirch)
½ tsp. cumin (jeera)
½ tsp. yellow chilli powder
A small pinch turmeric powder (haldi)
¾ tsp. coriander powder
A small pinch heeng
Salt to taste
3 tbsp. oil
Oil for frying
Instructions:
Take all the flours in a mixing bowl.
Add all spices and 3 tbsp. oil.
Combine well and knead dough using enough water. Knead tight dough.
Cover with a lid and keep aside for 15-20 minutes.
After 15 minutes knead again and make small balls.
Roll thinly in poori size shape.
Heat oil in a kadhai for frying. When oil becomes hot, drop kheekris in kadhai.
Fry over low flame till they become crispy and golden brown.
Remove kheekri from oil.
Serve with hot cup of tea.
Tips:
- Roll thinner than the plain puri.
- You may add or skip any spices according to your taste.
- Do not skip oil that is used while kneading the dough.
