Cheesy Nachos | Cheesy Nachos with Salsa

Cheesy nachos is a Mexican delight prepared with maize flour, topped with salsa, melted cheese sauce and enhanced with mayonnaise. The preparation of cheesy nachos is easy. Nachos are a kind of chips that is prepared with maize flour, whole wheat flour and refined flour.

To make nacho chips knead the dough, roll like thin chapatti, cook lightly, prick with fork, cut into triangles and then fry them into hot oil. You may store them in airtight container for 15 days. You may enjoy them with any dip.

These nachos are topped with salsa and cheese sauce. Salsa is prepared with chopped onion, tomatoes, coriander, green chilli, sweet corn, tomato ketchup and lemon juice. To make cheese sauce, cook milk and cheese until mixture become thick. Give a yellow color to the sauce using some turmeric powder. This cheesy nachos are spiced with a salsa spice mix that is prepared with cumin, coriander, degi mirch, amchoor powder and oregano.

Cheesy nachos with salsa is the best snack for party and get together. Either kids or elder everyone enjoy nachos.

Ingredients:

For Dough:

½ cup Maize flour
¼ cup Maida
½ cup whole wheat flour
Salt to taste
Juice of 1 tbsp. ginger garlic paste
1 tsp. vinegar
½ tsp. turmeric powder

To make salsa:

2 medium tomatoes
1 medium onion
2 tbsp. tomato sauce
1 green chilli, chopped
Chopped Coriander 
Salt to taste
½ lemon juice
¼ cup sweet corn

To make salsa spice mix:

1 tbsp. cumin seeds
1 tbsp. coriander seeds
½ tsp. salt 
2 tsp. degi mirch
½ tsp. amchoor powder
1 tsp. oregano

For Cheese sauce:

1 tsp. ghee
¼ tsp. turmeric powder
1 glass milk
½ cup cheese
1 tsp. corn flour for slurry

For topping:

Mayonnaise sauce

Instructions:

For Dough-

Roast lightly maize flour for 1 minute on low flame. 


Take in a bowl. Add wheat flour, refined flour, salt, turmeric powder, ginger garlic juice and vinegar. 


Knead well using required amount of water. Cover with a lid and keep aside. 


For Salsa-

Take chopped onion, tomatoes, green chilli and coriander in a bowl. Add tomato ketchup and mix. Add salt and sweet corn. Squeeze ½ lemon and mix well. Keep aside.

For Salsa spice mix-

Roast cumin and coriander seeds along with salt. 


Roast on low to medium flame till they became light brown. Turn off flame. Add degi mirch, amchoor powder and oregano. 


Mix well and grind to make powder. Keep aside.

For Cheese sauce-

Heat 1 tsp. ghee in a pan. Add turmeric powder and milk. 


When it comes to boil, add cheese. 


Mix 1 tsp. corn flour in 1 tbsp. water to make slurry and add into milk. 


Cook the mixture till it became thick. Cheese sauce is ready.

Making Nacho –

Knead again the dough. Divide into two parts. Make smooth balls. Roll thin like chapatti using dry flour. Prick with fork unevenly.


Heat a girdle and cook chapatti lightly from both sides. 


Remove and place on a counter.
Cut into 1 and ½ inch wide strips and then into triangles.



Heat oil in a pan. Drop nachos in hot oil. Fry on medium flame and stir continuously. Fry till rhey became crispy. Remove from oil.

Assembling –

Spread nachos on a serving plate. Spread salsa over them. 


Sprinkle some salsa spice mix. Top with cheese sauce and mayonnaise. Serve immediately.


Tips:

  1. Add 1 tsp. oil to make nachos soft at the time of kneading the dough.
  2. You may sprinkle salsa spice mix on salad, raita, chat and snacks.
  3. You may skip turmeric powder if you want white cheese sauce. 
  4. You may sprinkle some fresh chopped coriander and green chilli over cheesy nachos.
