Cheesy masala pav (चीज़ी मसाला पाव ) is a delicious and popular Mumbai street food. In this recipe pav is sautéed with onion, tomato, capsicum and basic spices. It is served with the topping of melted cheese. Cheesy masala Pav has the flavor of pavbhaji because of pavbhaji masala with the additional taste of melted cheese. It is a simple and easy recipe. It is a great appetizer and snack recipe.

To make cheesy masala pav, cheese is cooked with milk and corn slurry to make cheese sauce. Then pav is sautéed with chopped ginger, onion, tomatoes, capsicum with the spices like, pav bhaji masala, turmeric powder, coriander powder, turmeric powder and red chilli powder. Squeeze ½ lemon to get a tangy flavor. Garnish with fresh coriander leaves or you may garnish with some sev. Cheesy masala pav can be prepared for any weekend party or get together. Serve cheesy masala pav along with a hot cup of masala chai. This cheesy and spicy masala pav is everyone’s favourite food.

Ingredients:

For cheese sauce-

1 tbsp. cream
1 cup milk 
½ cup cheese
1 tsp. corn flour for slurry

For masala pav-

4 pav
3 tbsp. oil
½ tsp. cumin seeds
1 tsp. chopped garlic cloves
1 onion, chopped
1 green chilli, chopped
2 medium tomatoes, chopped
Salt to taste
¼ tsp. turmeric powder
½ tsp. coriander powder
¼ tsp. red chilli powder
1 small capsicum, chopped
½ tsp. pav bhaji masala
½ lemon juice
Fresh coriander leaves for garnishing

Instructions:

Making cheese sauce-

Heat 1 tbsp. cream in a pan. Heat it on low flame stirring continuously. 


Add 1 cup milk. Mix and stir. Add ½ cup cheese and cook on medium flame till cheese melts completely. Keep stirring.


Mix 1 tsp. corn flour with 1 tbsp. water and add into pan. Mix and stir so that it will not stick at bottom. 


Cook till it become thick. Turn off flame. Cheese sauce is ready.


Making masala pav-

Cut pav into small pieces and keep aside.


Heat 3 tbsp. oil in a pan. Add cumin seeds in hot oil. When they crackle, add chopped 1 tsp. garlic cloves. Sauté till raw aroma goes away.


Add chopped onion and cook till they become translucent. 


Add chopped 1 green chilli.
Add chopped tomatoes and cook on medium flame. 


Add a dash of salt to cook them faster. Add turmeric powder, coriander powder and red chilli powder.
Saute till tomatoes become mushy.


Add chopped capsicum and stir. Add ½ tsp. pavbhaji masala. 


Mix and stir. Add ¼ cup water.
Adjust salt and mix. Squeeze ½ lemon. 


Add pav pieces. Mix to combine all the spices. Masala pav is ready. Garnish with coriander leaves.


Serve masala pav into a serving bowl. Pour cheese sauce over it. 


Garnish with coriander leaves and serve hot.

Tips:

  • You may garnish with some sev.
  • You may add tamarind pulp in place of lemon.
  • You may add vegetables of your choice like cabbage, carrot or beans.
