Spring Roll Recipe with Sheets

Vegetable spring rolls (स्प्रिंग  रोल) are popular and everyone’s favorite snacks or starter recipe from Indo Chinese cuisine. Here I am sharing spring roll recipe with homemade sheets. These spring rolls are crispy and tasty filled with delicious vegetables. Vegetables like cabbage, capsicum, carrot and corn are sautéed with onion, soya sauce, vinegar and ketchup. Spices like red chilli powder, black pepper powder are used.

To make spring rolls, you may use readymade or homemade sheets. Sheets or wrappers can be made easily at home. You need just a few ingredients to make wrappers. It is an easy and simple process. These homemade sheets are eggless, healthy and free from preservatives. The filling of spring rolls is depend on your choice. You may add any type of vegetable according to your taste and availability.
You may add cheese to make it cheesy.

These deep fried and crispy spring rolls can be a part of any special occasion or party. These are served with tomato ketchup, dips or red chilli sauce.

Ingredients:

For filling-

2 cup cabbage, chopped
1 cup capsicum, chopped
1 cup carrot, chopped
1 tbsp. oil
salt to taste
1 tsp. ginger garlic paste
1 onion, sliced
 ½ cup chopped spring onion
½ cup sweet corn
1 tbsp. soya sauce
1 tbsp. tomato ketchup
1 tbsp. white vinegar
¼ tsp. red chilli powder
¼ tsp. black pepper powder

For sheets-

2 cup maida
Salt to taste
Oil for applying
1 tbsp. maida for paste
Oil for frying

Instructions:

Step 1-

Take chopped cabbage, capsicum and carrot in a bowl. Sprinkle salt and mix. Keep aside for 15 minutes. Vegetable will release its juice when come to contact with salt.


Step 2-

Take 2 cup flour in a mixing bowl to make sheets. Add salt and little water. Start to knead and add required amount of water. Knead to make a soft and smooth dough. Cover with a lid and keep aside.


Step 3-

Place a muslin cloth over a bowl. Add salted veggies and squeeze out all the juice.


Remove from cloth and keep aside.


Step 4-

Heat 1 tbsp. oil in a pan. When it became hot, add 1 tsp. ginger garlic paste and sauté till raw aroma goes away.


Add 1 sliced onion and sauté till they become golden brown in colour.


Add chopped spring onion and sweet corn. Add salt, red chilli powder and black pepper powder. Mix well. Add veggies, soya sauce, tomato ketchup and vinegar. Mix properly to combine.


Step 5-

Now prepare sheets. Make small ball from the dough. Make 12 small balls.


Take 1 ball, dust dry flour and roll to make a small poori size roti. Make 4 rotis.


Now take 1 roti, apply oil over the entire surface. Dust flour.


Place another roti over it, apply oil and dust flour. Place 3rd roti over it, apply oil and dust flour. Place 4 roti over it.
Then roll them lightly to make approx. 8 inch diameter roti with the help of dry flour.


Place on a hot tawa and cook lightly from both sides. Remove from tawa.


Now separate the layers gently. You will get your sheets. Make all the sheets in same way from remaining flour.


Step 6-

Take 1 tbsp. maida and add little water to make a smooth paste.


Step 7-

Now take a sheet, place some filling over it and start to roll tightly. Fold the sides inside.


Apply paste on the edges and seal tightly. Make all spring roll in this way.


Step 8-

Heat oil in a pan over medium flame. Drop spring roll and deep fry them on low to medium flame till they become golden brown in colour. Remove from oil and drain excess oil.


Your crispy spring rolls are ready to serve. Serve them with your favorite dip.

  • You may adjust spices and sauces according to your taste.
  • You may skip or add vegetables of your choice.
  • You may add cheese and herbs.
  • You may add sprouts to make them healthier.
