Kaju Khajoor Roll | Cashew Dates Roll

Kaju Khajoor roll (काजू खजूर रोल ) is a perfect and delicious combination of kaju and khajoor ki barfi. This sweet has the taste of both sweets. This is so easy and simple that you can make it easily at home. This roll has the goodness of cashews and dates. This authentic recipe is prepared with cashew, dates and flavored with cardamom powder. To make it vegan recipe, replace ghee with coconut oil. It can be prepared for festive or special occasions.

This cylindrical shaped Indian sweet has less sweetness in comparison of other sweets. Dates have its own sweetness. The half part of this recipe is similar to kaju ki barfi. We need to follow the steps of kaju ki barfi. Grinded kaju is cooked in sticky sugar syrup along with ghee and cardamom powder. When it is slightly hot, knead for 2 minutes to make it smooth. Then it is rolled with grinded and cooked dates mixture.

This kaju khajoor roll is perfect for rakshabandhan and Diwali. This sweet is low in calorie as only kaju part has some sweetness. Prepare this for a party or get together and serve your guests these delicious, sweet rolls, filled with healthy dates and flavored with cardamom.

Ingredients:

1 cup kaju (cashews)
½ cup sugar
¼ cup water
¼ tsp. cardamom powder
¾ tsp. ghee
¾ cup khajoor (dates), seedless
½ tsp. ghee for dates

Instructions:

Grind kaju into a fine powder. Don’t over grind them. If you get a coarse powder, sieve and again grind the coarse pieces or just let it be. Keep aside.


Grind khajoor without adding any water.
 

Heat a pan and add ghee. Cook dates mixture for 2 minute on low to medium flame.


Let it be slightly cool. Apply ghee on your hand and roll to make a smooth log. Cut log into two pieces and keep aside.


Boil sugar and water in a pan on medium flame. 


Let the sugar dissolve in the water. Stir gently. Let the mixture boil for 1 minute. Then add cardamom powder and mix. 


Don’t make a string consistency sugar syrup. Stir and make a thick sugar syrup.
Now add cashew powder. Stir continuously to make a lump free mixture. Keep stirring the mixture on low heat. Add ghee and stir.
The mixture would start thickening and almost come together. 


When it starts coming together in one form, remove the mixture from the pan.
When the mixture is slightly hot, knead it for 2-3 minutes to make a smooth dough.


Apply ghee on a butter paper. Place the dough on butter paper. Roll in an oval shape using rolling pin.


Cut in between and place a khajoor log and start to roll to make a smooth roll.


Keep another khajoor log over other part and make a smooth roll. Cut rolls to make a 2-3 inch pieces.


 Your kaju khajoor roll is ready to serve.




Tips:

  • Avoid using refrigerated cashews.
  • Use nonstick pan to cook the cashew and dates mixture.
  • Don’t over grind the cashews. 
  • Don’t overcook the cashew and dates mixture.
