Hyderabadi Cookies | Karachi Cookies
Hyderabadi Cookies (हैदराबादी कुकीज़ ) also known as Karachi cookies are popular and delicious eggless tutti frutti cookies. These fruity biscuits have a pleasant flavor of vanilla which they get from vanilla custard powder. These cookies are enhanced with the chopped cashews. The making of fruity and nutty cookies will be fun for you. This is an easy to make recipe and can be prepared with or without oven.
To make Hyderabadi cookies, all purpose flour and vanilla custard powder are combined and enhanced with tutti frutti (candied fruits) and cashews. If you don’t have custard powder, you can take 2 cup flour and 1 tsp. vanilla essence. You may add cardamom or rose flavor. Shape the mixture to a square log and let it chill until firm. Then cut into pieces and bake in oven or kadhai.
Enjoy these Hyderabadi cookies as a tea time snack along with a hot cup of masala tea.
Ingredients:
1 ½ cups maida
½ cup vanilla custard powder
½ cup soft butter (unsalted)
¾ cup powdered sugar
½ cup tutti-frutti
¼ cup chopped cashew
¼ tsp. baking powder
Instructions:
Take sugar powder in a bowl. Add butter and whisk in one direction till it become fluffy and creamy using your hand or beater.
Add tutti-frutti and chopped cashews. Mix well.
Add maida, custard powder and baking powder. Mix to combine.
Add 1 tablespoon milk if here is difficulty to combine. Mix and make a dough.
Place the dough on a platform. Make a smooth square shape log and keep it in refrigerator for 2 hours.
After 2 hours take the log and cut into approx. 1 cm thick pieces.
Grease a tin and place the pieces over it. Now bake for 15 minutes on medium flame in tandoor or kadai.
After 15 minutes remove from oven and let it cool for 15 minutes.
Serve and enjoy.
Tips:
- Use unsalted and soft butter.
- If you don’t have custard powder, take 2 cup flour and 1 teaspoon vanilla essence.
- You may skip cashews.
- You may add cardamom powder or rose essence.
