Cheesy Tacos are simple, delicious and easy recipe from Mexican cuisine that are filled with lots of cheese, veggies and spices. Mostly kids are cheese lovers and vegetable haters. If you want to serve them these healthy and nutritious vegetables, prepare this recipe as it has lots of colourful vegetables like cabbage, capsicum, corn and carrot. When you haven’t really thought about what to make in lunch or dinner, prepare this recipe. 

Cheesy Tacos

Usually tacos are made in oven but here is the recipe about how to make on tawa. I have used here processed cheese. Any type of cheese like mozzarella or cheddar can be used. Here is my cheesy tacos recipe. These vegetarian tacos are stuffed with a combination of sauteed cabbage, capsicum, carrot and spring onion and enhanced with herbs, red chilli powder and black pepper powder.

Cheesy Tacos can be prepared for breakfast, lunch, dinner or as a full meal. They can be served with your favorite dip or sauce.

Ingredients:

2 cup refined flour (maida)
1 tsp. oil
salt for flour
1 cup cabbage, chopped
1 tsp. ginger garlic paste
½ cup capsicum, chopped
1 medium size onion, chopped
½ cup carrot, chopped
½ cup spring onion, chopped
½ cup sweet corn
¼ tsp. red chilli flakes
¼ tsp. black pepper powder
1 tbsp. tomato ketchup
Salt for vegetables
some cubed paneer (optional)
Processed cheese
Herbs/ pizza seasoning
1 tbsp. oil to sauté veggies

Instructions:

Take flour, salt and oil in a bowl. 


Add water in parts and knead to make a soft dough.


Cover with a lid and keep aside.
In a pan heat 1 tbsp. oil on medium flame. Add ginger garlic paste and sauté till raw aroma goes away.


Add chopped onion and sauté till they become translucent.


Add chopped cabbage, capsicum, spring onion, carrot and sweet corn. Mix well.


Add salt, red chilli powder, black pepper powder, tomato sauce and paneer cubes.


Mix gently. Filling of tacos is ready.
Now make small balls from dough.
Dust dry flour and roll to make a thin chapatti.


Heat a tawa and place chapatti on it. Cook on high flame.
Cook lightly from both sides. Don't brown it.


Remove from tawa and place on a counter.
Grate some cheese over it. Put some filling.


Sprinkle some herbs and again grate some cheese.
Fold in between and press lightly.


Heat a tawa and drizzle some oil. Place chapatti on it.
Cook from both sides till it become crispy and golden brown in colour.


Serve it from your favorite dip or sauce.
