Arbi ki Sabji | Arbi Fry | Arbi ki Sookhi Sabji

Arbi Fry ( अरबी की सूखी सब्जी) is a delicious and popular dry vegetable made with arbi (colocasia) and spices. Arbi ki sabji is a quick and easy to make recipe. This is no onion no garlic and vegan recipe. This recipe is very popular in North India and paired well with poori. In summer season, it is mostly cooked vegetable. It is also known as 'colocasia' and 'taro root'.

Arbi fry is not only a tasty recipe but also very nutritious. The main spice which is used to cook arbi is ajwain (Carom seeds). With very low calorie content and high in nutrients, arbi can actually help in losing weight. The essential 17 amino acids in arbi prevent cancers, cardiovascular and other diseases. It is known for its nutty flavor and mildly sweet taste. It is packed with carbohydrates, folate, iron, vitamins and minerals. Ajwain seeds have health benefits and they are used to treat flatulence and indigestion.

We cook so many variations with arbi like arbi ki rasili sabji, dahi ki arbi, arbi ke kabab. To make arbi ki sookhi sabji, at first boil, peel and chop arbi and sauté with various basic Indian spices. The addition of green chilli and lemon juice make it tangy and spicy.

This crispy and spicy arbi fry goes well with poori, roti and paratha.

Ingredients:

500 gm. arbi
½ tsp carom seeds (Ajwain)
A small pinch heeng (asafoetida)
½ tsp turmeric
¼ tsp chilli powder
½ tsp coriander powder
½ tsp. amchoor powder
1 green chilli, chopped
Salt to taste
2 tbsp oil
2 tsp. lemon juice

Instructions:

Wash the arbi properly with water to remove all dirt.


Boil arbi in a pressure cooker with little water for 5 minutes or till they become soft. Do not overcook.
Cool down and peel off the skin. Chop them into pieces and keep aside.


Heat oil in a pan on medium flame. Add ajwain and heeng.


When ajwain became golden in colour, add turmeric powder.


Add chopped arbi and mix properly.


Add salt, red chilli powder, coriander powder and green chilli. Mix well to combine all the spices.


Add amchoor powder and stir for 1 minute.


Add lemon juice and mix. Turn off flame.


Tips:

You may adjust spices according to your taste.
