Tawa Pulao |Tava Pulav | Pav Bhaji Pulao

Tawa Pulao or Tava Pulav made with rice, vegetables and pav bhaji masala is a popular Mumbai street food. It is a vegan and quick rice dish. It is very yummy and tasty dish like biryani and fried rice. Biryani takes more time and have multiple steps. Tawa pulao doesn’t need any effort and more time to cook. You need lots of spices to cook biryani but the main spice of tawa pulao is pav bhaji masala. If you have leftover rice in your fridge, you can cook it within minutes.

Tawa Pulao is cooked on the tawa like pav bhaji so it’s called as tawa pulao. The street food vendors have a huge iron tawa or girdle on which they make pav bhaji, ragda pettice or many other street foods. They cook tawa pulao on that girdle. If you don’t have huge tawa at home, you can cook in a pan or kadhai.

Tawa Pulav is a quick and simple recipe. To make this recipe, boil or pressure cook the rice. Then they are sautéed with vegetables, pav bhaji masala and various spices. You can add vegetables of your choices or that you have in your refrigerator. It can be prepared with leftover rice.

You can prepare it for breakfast, lunch and dinner. You can also pack this for lunch box. It can be served with raita, pickle or any other accompaniment.

Ingredients:

1 cup Basmati Rice
1 bay leaf
½ teaspoon Cumin Seeds
½ teaspoon Red Chilli Powder
½ teaspoon Turmeric Powder (haldi)
¼ teaspoon Garam Masala Powder
½ teaspoon pavbhaji Masala
Salt to taste
1 small onion, finely chopped
1 medium Tomato
3-4 Beans
½ carrot, finely chopped
¼ cup peas (fresh or frozen)
½ tbsp. spring onion, finely chopped
½ cup cabbage, finely chopped
2 tbsp. oil

Instructions:

Wash the rice few times till water turns clear and soak in enough water for 30 minutes.
In a pan add soaked rice, salt, bay leaf and 2 cup water. Cover the pan with lid and cook on low heat till all water has evaporated and rice is cooked completely. Switch off flame and let it rest for 10 minutes. Then fluff with fork.


If you are using pressure cooker, add soaked rice along with salt, bay leaf and 1.75 cup water. Close the pressure cooker with lid and cook on high heat for 2 whistle. Switch off flame. Once the pressure settles down, open the cooker and fluff with fork gently.

Making Tawa Pulao:

Heat oil in a pan. Add cumin seeds.


When they begin to splutter, add chopped onion. Sauté till they become translucent.


Add chopped tomatoes, haldi and red chilli powder.


Sauté until the tomato turn soft and mushy.
Add pav bhaji masala and mix well.


Then add beans, spring onion, carrots, peas and cabbage.


Add salt and mix well. Cover with lid and cook on low flame for 1 minute until they are cooked slightly.
Now add rice and garam masala.


Mix gently until all ingredients and rice grains are evenly coated with masala.


Serve tawa pulao with pickle and raita.

Tips:

  • You can use leftover rice, if you have.
  • You can vegetables of your choice or availability in your fridge. You can add potatoes, broccoli and mushrooms.
  • You can add ginger and garlic.
  • Adjust pav bhaji masala and red chilli powder to your taste.
  • If you are using fresh peas, boil them with rice.
