Paneer Paratha is a yummy whole wheat paratha stuffed with paneer (cottage cheese) and various spices. This is another exotic stuffed paratha from Indian cuisine. There are so many different type of parathas like mooli paratha, gobhi paratha and onion paratha. The best part is that every paratha has its own distinct taste. It is an all-time favorite paratha at home.
This is a simple and quick paratha recipe made with basic ingredients. Make this paratha with homemade paneer. The paneer retains its freshness and softness even when cooked. To make paneer paratha knead a soft and smooth dough as paneer has moisture. Grate or crumble paneer finely. At last add chopped coriander and spices. Some people add chopped onion with paneer and some cook aloo paneer paratha.

¼ tsp salt
Water as required
½ tsp red chilli powder
½ tsp coriander powder
salt to taste
¼ tsp. garam masala
Chopped coriander
Oil, for frying
Add water and gather to form a soft dough. Knead it well.
The dough should be smooth and soft. Allow it to rest covered for at least 30 mins.
Add 1-2 tbsp. paneer stuffing in the center.
Bring the edges together and seal it.
Then press the dough down with your hands.
Then apply a little dry flour and roll the stuffed paratha to a circle of about 6 to 7 inches in diameter.
Heat a tawa. Put this stuff paratha on it.
Cook well with the help of desi ghee. Apply desi ghee on both sides. Press with a spatula and cook the paratha on slow to get golden crisp spots.
Remove and transfer on a plate.
Apply some butter and serve this paratha with curd or pickle.

For Dough -
2 cups atta (Whole wheat flour)¼ tsp salt
Water as required
For Stuffing –

Making Dough -

To make the stuffing, crumble paneer finely. Add salt, coriander powder, red chilli powder, garam masala and chopped coriander. Mix everything well.Making Paratha –
Make medium sized balls from the dough. Roll it a little with the help of dry flour into a circle of 4-5 inch diameter.Add 1-2 tbsp. paneer stuffing in the center.
Bring the edges together and seal it.
Then press the dough down with your hands.
Then apply a little dry flour and roll the stuffed paratha to a circle of about 6 to 7 inches in diameter.

Tips:
- You can add chopped onion and green chilli.
- You can use store-bought paneer instead of homemade.
- You can add finely chop ginger and garlic.
- I prefer whole wheat flour so, if you want all purpose flour (maida) you can use it.
