Aloo ka Paratha

Aloo ka paratha is one of the most popular stuffed paratha of North Indian cuisine. This paratha is made with whole wheat flour and stuffed with spicy mashed potatoes. Everyone loves this hot crispy stuffed paratha which is roasted with lots of ghee, topped with butter and accompanied with pickle or curd. No one can bored to have this paratha all the day. My daughter can have aloo paratha any time. It can be enjoyed with butter and a glass full of chaach or lassi.

There are so many variations of stuffed paratha like mooli paratha, paneer paratha or gobhi paratha. You can use any vegetable to stuff the paratha. But aloo paratha is one of the basic parathas that you can easily cook at home when nothing strikes you. This aloo paratha is an easy and yummy recipe. This doesn’t take more time to cook if you have some boiled potatoes in your refrigerator.

To make this paratha, firstly you need to make a dough using wheat flour, salt and water. The key ingredient of this recipe is potato. Boil the potatoes, mash and add spices like salt, red chilli powder, coriander powder, garam masala and asafoetida along with green chilli and coriander leaves. You can skip or add any spices that you want like carom seeds, fennel seeds powder. It depends on your taste and preference. To give a variation, you can also add some chopped onion or crumbled paneer.

Aloo ka paratha is perfect for breakfast or as a full meal. It can be packed in the lunch box. Enjoy this aloo paratha with butter, pickle or curd.

Aloo ka Paratha

Ingredients:

For Dough-

1 ½ cup atta (Whole wheat flour)
water, as needed to knead the dough
salt to taste

For Stuffing-

3-4 medium potatoes
½ teaspoon coriander powder
A small pinch asafoetida
¼ teaspoon garam masala
1 green chilli, finely chopped
salt, as needed
¼ tsp. amchoor powder
¼ teaspoon red chilli powder
ghee to cook paratha

Instructions:

Making Dough -

In a large mixing bowl take whole wheat flour, ½ tsp salt and mix. Add some water at a time.
Mix everything and begin to knead into a smooth and soft dough. Cover and keep the dough aside for 20 to 30 minutes.

Making Stuffing-

Meanwhile wash the potatoes well. Add with enough water in a pressure cooker. Boil on medium flame for 4-5 whistles or till they become soft.
Once potatoes cool down, peel and mash.
Add coriander powder, garam masala, salt, asafoetida, red chilli powder, amchoor powder and chopped green chilli.


Mix the spices with potatoes properly.


Making Paratha –

Make a medium sized ball from dough. Roll it a little with the help of dry flour.
Put around 2 tbsp. of stuffing in the center.


Bring the edges together, make ball and flatten it with your hands.


Then apply a little dry flour, now roll it very gently and carefully into about 7 inch diameter circle using dust flour.


Heat a tawa. Put this stuff paratha on it.


Cook until brown spots appear on base. Then flip the paratha and apply some ghee.


Again flip paratha and apply ghee on other side. You will see some golden brown spots. Fry paratha from both sides by pressing with spatula or spoon.


Paratha should become golden and crispy from both sides.
Put some butter over paratha and serve.

Tips:

  • You can use oil in place of ghee.
  • You can add chopped coriander leaves.
  • To make the paratha more nutritious, you can add some finely chopped onion or veggies like carrot, french beans.
  • You can add some crumbled paneer or grated cheese.
  • You can also add spices like carom seeds or fennel seeds powder.
  • To make paratha soft, you can add some oil at the time of kneading the dough.
