Masala Gur Recipe | Spicy Gud | Spicy Jaggery

Masala Gur or spicy jaggery ( मसाला गुड़ ) is a winter special sweet prepared with healthy nuts and spices. Winter is the best time to munch this Indian sweet. This sweet keeps you warm and healthy in winter. This sweet works as digestive and energy bar. This is a perfect combination of healthy ingredients which is great for winter season. This sweet is made with so many healthy nuts like almond, cashew, walnut, raisins and body warmer spices like dry ginger powder (Saunth), black pepper powder and carom seeds.

One of the winter foods that you can add to your diet is jaggery or gur. Apart from keeping the body warm, gur is an age old digestive sweetener and is also known to be excellent for issues related to the respiratory tract like cold and cough. Gur is made from unrefined sugar so it is a healthier and better version of white sugar.

Gur is made from sugarcane and prepared by many processes such as extraction, clarification and concentration. Refined white sugar contains only calories and don’t have any minerals or vitamins but gur have vitamins and minerals, including calcium, zinc, phosphorus and copper.

In this recipe spices have used which naturally keeps your body warm. They are dry ginger powder which also known as saunth powder, black pepper (Kali mirch) and carom seeds (Ajwain). They often used for upper respiratory infections, inflammatory pains and to improve digestion.
So have a look on this nutritious recipe.

 

Ingredients:

250 gm. Gur (Jaggery)
1 heaped tsp. Ghee (clarified butter)
10-15 Almonds
1/2 cup Cashew pieces
1 tbsp. Til (sesame seeds)
1 tbsp. Melon seeds
1/4 cup pista
1 tbsp. Kishmish (raisins)
5-8 Walnuts
1 tsp. Saunf (fennel seeds)
3/4 tsp. Black pepper powder
1.5 tsp. Dry ginger powder
3/4 tsp. Ajwain (carom seeds)

Ingredients:

Grease a plate with oil and keep aside.
Crush or chop gur into small pieces.
Dry roast almonds and cashews on low flame. 



Dry roast til and melon seeds.



Chop walnuts, pista and roasted almonds and cashews into small pieces.


Heat ghee in a pan and add gur. 


Cook it on slow heat till it melt completely. Stir continuously to avoid burning.


Now add all nuts and spices. Mix them properly and quickly.




Pour prepared masala gur batter in greased plate. Gently tap to spread and form an even layer.


Now let it cool down completely. Loosen it with a knife and give desired shape.


Then separate the pieces and store in an air tight jar.

Tips:

  • Don’t overcook gur else it will become hard candy.
  • You can add nuts of your choice like pistachio, peanuts and dry coconut.
  • Use heavy bottom pan.
  • After adding all the ingredients it needs to be quick as gur will solidify quickly.
