Instant Rava Uttappa or Sooji Uttapam is quick and easy South Indian breakfast recipe. This is a thick, shallow fried pancake prepared with sooji and curd. Generally Uttapam is made with the batter of rice and dhuli urad dal which has fermented for 8 hours or overnight in hot climate. If you are in hurry and want to make a quick and healthy breakfast so this is a better option. This is also a good option for tiffin box.
Rava Uttapam is made from sooji (semolina), curd and vegetables like onion, tomato and capsicum. You can add grated or chopped vegetables of your choice. You can sprinkle veggies on the top of uttapam like pizza or mix with batter. In this recipe here is no need to ferment batter, so if you want you can add little amount of baking soda. You can use fruit salt (Eno). This makes uttapam soft and spongy.
This traditional uttapam gives great taste with coconut chutney or coriander chutney.
Ingredients:
1 cup Sooji (semolina or rava)1/4 cup Curd (yogurt)
Salt to taste
½ green capsicum (finely chopped)
1 tbsp grated carrot
1 medium Onion (finely chopped)
1 medium Tomato (finely chopped)
1 green chilli (finely chopped)
½ tsp red chilli powder
1 tsp oil for shallow frying
Instructions:
1. Take sooji, salt, curd and red chilli powder in a bowl. Mix well.2. Add water to make a smooth and thick batter. Keep aside for 10 minutes.
3. After 10 minutes add chopped capsicum, onion, tomato, green chilli and grated carrot. Mix properly.
4. Check consistency of batter. Sooji absorbs water so it becomes thick. If batter is thick, add little water to make a batter thick consistency.
5. Heat a nonstick pan or tawa over medium flame. Spread some oil. Pour a ladleful of uttapam batter and spread in a circular motion with the help of ladle. It should not be too much thick or thin.

6. Spread some oil around the edges of uttapam. Cook it for 1-2 minute. When the base is cooked and become brown in color, flip gently with the help of spatula. Cook it for another 1-2 minute until it become lightly crispy.
7. Serve hot with chutney or sauces of your choice.
Tips:
- You can add chopped coriander or shredded cabbage.
- If you want to spread veggies over uttapam instead of mixing in batter, skip step 3. In step 5 spread all veggies on top of the uttapam evenly. After that gently press the vegetables with the spatula, so that they stick to the batter. And follow the next steps.
