Mix Vegetable Sandwich with Peanut Butter

This cheese sandwich is a healthy breakfast or evening snack recipe loaded with lot of colorful vegetables, cheese and peanut butter. You can use any type of bread like white or brown bread but to make this sandwich healthier, you can use brown whole wheat bread. . I have added vegetables like onions, tomatoes, carrot and capsicum. I have used cheese spread in this sandwich. Enjoy this with green chutney or tomato ketchup and hot cup of coffee.


Sandwich with Peanut Butter

Ingredients:

4 bread slices
2 tbsp. peanut butter
1 small Onion finely chopped
1 small tomato finely chopped
1 small carrot finely chopped
1 medium size capsicum finely chopped
2 tbsp. Cheese spread or grated any type of cheese
A small pinch Salt
½ tsp. black pepper crushed
Italian Seasoning or pizza seasoning
½ tsp. red chilli flakes
1 tbsp. tomato sauce
Oil or butter for pan frying bread

Instructions:

Step 1

Take chopped mixed vegetables in a bowl and add in salt, seasoning, chilli flakes & pepper. Add cheese spread and tomato sauce. Mix properly.


Step 2

Apply peanut butter on one slice. Spread 1-2 table spoons of mixed vegetables mixture on other slice and cover it with another bread slice with the butter side facing downwards. Press it lightly.


Step 3

Heat tawa or pan on medium heat. Apply butter on top of the sandwich and place the sandwich on the pan with butter side facing down.


As the sandwich become brown from one side, now apply butter on the side facing up. When bottom side grill, flip the sandwich the other side.


Now cut the sandwich into half and serve hot with tomato ketchup.
