Sprouted Moong curry | Sprouts Curry Recipe 

Sprouted moong curry (स्प्राउटेड मूँग करी ) is a nutritious and easy to make curry that is prepared using moong (green lentils) sprouts and spices. It is a simple and vegan recipe. Here are so many ways to take sprouts like sprout chaat, soup and sprout salad.
 
Sprouted moong refers to whole moong beans, which have been sprouted. They're a good source of protein, fiber and vitamins. They are high in nutrients and antioxidants. They may protect against heat stroke, aid digestive health, promote weight loss and bad LDL cholesterol, blood pressure and blood sugar levels. This is a very delicious and healthy recipe.

To make sprout moong curry, boil sprouts and cook with onion, tomatoes and basic spices. It can be served with roti, rice and paratha along with pickle. You may cook this for lunch or dinner.

Ingredients:

2 cup Sprouted Moong
3 tbsp. oil
½ tsp. cumin seeds
A small pinch heeng
2 cloves
4 black peppercorn
2 bay leaves
1 medium onion, grated
5-6 ginger juliennes
3 medium tomatoes, pureed
½ tsp. turmeric powder
½ tsp. coriander powder
½ tsp. red chilli powder
Salt to taste
1 tbsp. kasuri methi
¼ tsp. garam masala
1 tsp. lemon juice

Instructions:

Wash sprouts properly and boil in a cooker with 1 glass water  for 2 whistle.
 

 
Heat oil in a pan.
Add asafoetida and cumin. Allow them to pop.
Add cloves, black pepper and bay leaves. 

 
Add onion and ginger julienne. Fry till oil floats.
 
 
Now add tomato puree. Add turmeric powder, coriander powder and red chilli powder. Give it a 30-40 second to roast. 
 
 
Constantly stir and cook till the spices give out a nice aroma. 
 
 
Open the cooker, pour the boiled moong in pan and add water according to how thick or thin you want.
 
 
Add salt to taste. Crush methi leaves between your palm and add. 

 
Cover and cook for 1 minute over low flame. 

 
Add garam masala and mix. Turn off flame and add lemon juice.
 
 
Garnish with finely chopped Cilantro or ginger julienne and it is ready to serve.
Serve hot with Rice or Chapatis .
 

Tips:

  • You can add desiccated Coconut and amchoor powder.
  • You can make it a little bit sweet.
  • You may add some green peas.
