Potato coins with cheese dip

Kothimbir Vadi

Kothimbir Vadi is a yummy fried snack of Maharashtra. “Kothimbir” means coriander leaves in Marathi. It is prepared by mixing coriander leaves, Besan and spices. This is a wonderful tea time snack.

Kothimbir Vadi


Ingredients:

Coriander Leaves (Dhania)  1 big bunch
Besan                                   2 cup
Green Chilli                         4-5 finely chopped
Turmeric Powder                 ½ tsp.
Red chilli Powder                ¼ tsp
Amchoor Powder                ½ tsp
Heeng                                  a small pinch
Baking Soda                        a small pinch
Coriander Powder               ½ tsp
Garam Masala                     ¼ tsp
Oil                                      1 tsp and 2 tbsp for frying
Salt                                      as per taste

Instructions:

Step1-

At first wash coriander leaves properly and chop finely. Drain excess water. Spread over a kitchen towel to remove excess water.

Step2-

After that take a mixing bowl. Add leaves, besan and green chilli, turmeric powder, red chilli powder, soda, salt, 1 tsp oil and heeng. Try to bind the mixture. If mixture is dry, add some water or mixture has excess moisture, you can add some besan. Now bind the mixture and give a cylindrical shape.

               
                                 

Step3-

Prepare the steamer with 2 glasses of water. Grease a dish of steamer and place the rolls in the steamer plate. Steam the rolls in the steamer for about 15-20 minutes on high heat. After that check the mixture by inserting a knife into it. Knife will come out clean. Remove the tray and let it cool.

Step4-

When mixture cools down completely, take out and cut them into small pieces. Heat 2 tablespoon oil in a pan. When oil becomes hot, add vadi pieces and roast them. Sprinkle coriander powder, amchoor powder and garam masala. Flip them carefully until they become crispy and light golden brown. Serve with hot cup of tea or as usual coriander chutney and tomato ketchup.


Tips:

  • Kothimbir vadi is prepared in many ways. You can make a better of mixture like dhokla at the time of step 2 and cut into diamond shape.
  • Add 1 tbsp sesame seeds at the time of roasting. It gives amazing taste.
  • You can fry in ajwain or cumin if you want.
  • You can shallow fry them in a pan.
